- 1 cup unsalted butter
- 1 cup water
- 1/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup mini marshmallows (optional)
- Chocolate frosting (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a saucepan, melt the butter with the water and cocoa powder over medium heat, stirring until well combined.
- Mix your sugar, flour, salt, and baking soda together in a large bowl.
- Pour the warm chocolate mixture into the bowl with the dry ingredients. Add the eggs and vanilla extract, stirring until you achieve a smooth batter.
- Fold in the mini marshmallows if desired.
- Pour the batter into the prepared muffin tins, filling each cavity about two-thirds full.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool completely before generously frosting with chocolate frosting.
