- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- 1/2 tsp vanilla extract
- A pinch of salt
Instructions
- Combine chocolate cookie crumbs and melted butter in a bowl. Mix until everything is well coated.
- Press this mixture firmly into the bottom and up the sides of a tart pan. Refrigerate for about 30 minutes to allow it to set.
- Beat together the creamy peanut butter and powdered sugar until it’s silky smooth. Spread this mixture evenly over the cooled crust.
- Heat the heavy cream over medium heat until it starts to simmer. Pour it over the chopped semi-sweet chocolate and let it sit for 2-3 minutes. Stir until it’s beautifully smooth, then add the vanilla extract and a pinch of salt for depth.
- Pour the rich ganache over the peanut butter layer, spreading it out evenly. Chill in the refrigerator for at least 2 hours before serving.
