- 1/2 cup Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Cinnamon
- 1/2 teaspoon Salt
- 1/2 cup Cold Unsalted Butter, diced
- 3/4 cup Heavy Cream
- 1 teaspoon Pure Vanilla Extract
- 2 cups Fresh Peaches, peeled and diced
- 1/4 cup Honey
- 1 teaspoon Pure Vanilla Extract (for glaze)
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Whisk together the flour, sugar, baking powder, cinnamon, and salt until combined.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles pea-sized crumbs.
- Whisk together the heavy cream and vanilla extract in a separate bowl. Pour this mixture into the flour mixture, stirring gently until just combined.
- Fold in the diced peaches with care to avoid mushiness.
- Turn the dough onto a floured surface and gently knead it 3-4 times until it comes together. Shape the dough into a 1-inch thick circle and cut it into 8 wedges.
- Place the scones on the prepared baking sheet and freeze for 15-20 minutes to help them rise during baking.
- Bake in the preheated oven for 20-25 minutes or until golden brown on top.
- Mix together the honey and vanilla extract, then drizzle this mixture over the cooled scones.
Notes
For added indulgence, serve with clotted cream or whipped cream. Store leftovers in an airtight container for up to 2 days or freeze for longer storage.
