Ingredients

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup black beans (optional)
  • 1/2 cup corn (optional)
  • 1 teaspoon taco seasoning
  • 1012 small corn or flour tortillas
  • Cooking spray or olive oil
  • Sour cream, salsa, or guacamole for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the shredded chicken, cheese, black beans, corn, and taco seasoning in a large bowl.
  3. Warm the corn tortillas in the microwave for about 30 seconds.
