- 1/2 cup black beans (optional)
- 1/2 cup corn (optional)
- 1 teaspoon taco seasoning
- 10–12 small corn or flour tortillas
- Cooking spray or olive oil
- Sour cream, salsa, or guacamole for serving
Instructions
- Preheat your oven to 425°F (220°C).
- Combine the shredded chicken, cheese, black beans, corn, and taco seasoning in a large bowl.
- Warm the corn tortillas in the microwave for about 30 seconds.
- Spoon a small amount of the chicken mixture onto each tortilla and roll tightly.
- Arrange the taquitos seam-side down on a greased baking sheet.
- Spray the tops with cooking spray or brush lightly with olive oil.
- Bake for 15-20 minutes until golden brown and crispy.
- Serve warm with sour cream, salsa, or guacamole.
