- 2 lbs chicken thighs
- 3 ripe tomatoes
- 1 red bell pepper
- 1 habanero pepper (or use 1/2 for a milder taste)
- 1/2 cup olive oil
- 1 cup chicken stock (broth)
- 1 onion
- 1 tsp bouillon powder
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1/2 tsp curry powder
- 1/2 tsp salt
- Extra salt and black pepper for seasoning the chicken
Instructions
- Start by washing and patting dry the chicken thighs.
- Rub the chicken with salt and black pepper, then place them in a bowl to marinate.
- In a large pan, heat the olive oil over medium heat.
- Brown the chicken on each side for about 10 minutes, then remove and set aside.
- Split the onion in half; chop one half into small pieces and keep the other half intact for blending.
- Blend the tomatoes, red bell pepper, habanero pepper, and the unchopped half of the onion together until smooth.
- In the same pan, sauté the chopped onion in the remaining oil until translucent.
- Pour in the blended tomato and pepper mix and allow it to boil for about 5 minutes.
- Add the chicken back into the pot along with chicken stock, bouillon powder, black pepper, curry, and thyme.
- Taste for salt and adjust as necessary.
- Simmer for about 20 minutes, until the chicken is fully cooked and tender.
Notes
Browning the chicken is crucial for developing flavor. Adjust the heat level with habanero pepper according to your spice preference.
