Instructions
- Preheat your oven to 375°F (190°C).
- Combine strawberries, blueberries, sugar, cornstarch, and vanilla extract in a mixing bowl. Toss gently to coat.
- Roll out the pie crust on a clean surface and cut it into rounds, about 6 inches in diameter.
- Spoon a generous amount of the berry mixture onto the center of each crust round, leaving a good border around the edges.
- Fold the edges of the crust over the berries, creating a charming envelope around the filling.
- Place the galettes on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, or until the crust is golden brown and the berries are bubbling.
- Allow to cool slightly before serving.
- Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
