Delicious bite-sized Mini Beef Wellington Bites that combine succulent beef tenderloin, rich mushroom filling, and flaky puff pastry for a crowd-pleasing appetizer.

- 1 pound beef tenderloin
- 1 sheet puff pastry
- 1 cup mushrooms, finely chopped
- 1 tablespoon Dijon mustard
- 1 egg, beaten
- Salt and pepper to taste
- Olive oil for cooking
- Fresh thyme (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Add the chopped mushrooms, seasoning with salt and pepper. Cook until they release their liquid and turn golden brown. If desired, stir in some fresh thyme before removing from heat.
- Sear the beef tenderloin in the same skillet for about 1-2 minutes on each side until nicely browned.
- Remove the beef from heat and let it cool slightly. Then, spread a thin layer of Dijon mustard over the beef.
- Roll out the puff pastry and cut it into squares that are large enough to wrap the beef.
- Place a spoonful of the mushroom mixture in the center of each pastry square, followed by a piece of beef.
- Fold the pastry over the beef and seal the edges, then brush the tops with the beaten egg.
- Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and flaky.
- Serve warm and enjoy!
Notes
For the best results, use high-quality beef tenderloin. Make sure to bake the bites right before serving to maintain flakiness.
