- 3 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro (optional, for garnish)
Instructions
- Rinse the black beans under cold water and soak them overnight.
- After soaking, drain the beans and place them in a pot with 3 cups of water.
- Bring the water to a boil, then reduce the heat to low and let the beans simmer until they are tender, about 60 to 90 minutes.
- While the beans are cooking, heat olive oil in a separate skillet over medium heat.
- Add the chopped onion and cook until translucent, stirring occasionally.
- Stir in the minced garlic, cumin, and chili powder, cooking for an additional minute.
- Once the beans are cooked, add them to the skillet and mix everything well.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh cilantro if desired.
Notes
Store leftovers in an airtight container. They can be kept in the refrigerator for up to 4 days or frozen for up to 3 months.
