- 1 cup coconut milk
- 1 cup water
- 1 ripe mango, diced

Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, combine the coconut milk, water, and a pinch of salt. Bring to a boil.
- Once boiling, add the rice and sugar (if using) to the pot. Stir gently, then reduce heat to low.
- Cover the saucepan and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid has been fully absorbed.
- Remove the saucepan from heat and let it sit covered for another 5 minutes.
- Fluff the rice with a fork and gently stir in the diced mango.
- Serve warm as a delightful side or main course.
