Description

Ingredients

  • 1 cup rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 ripe mango, diced
  • 1 tablespoon sugar (optional)
  • Salt to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the coconut milk, water, and a pinch of salt. Bring to a boil.
  3. Once boiling, add the rice and sugar (if using) to the pot. Stir gently, then reduce heat to low.
  4. Cover the saucepan and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid has been fully absorbed.
  5. Remove the saucepan from heat and let it sit covered for another 5 minutes.
  6. Fluff the rice with a fork and gently stir in the diced mango.
  7. Serve warm as a delightful side or main course.
