Ingredients

  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 1 tablespoon lemon juice (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 2 cups white candy melts or white chocolate chips
  • Yellow food coloring (optional)
  • Lollipop sticks

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan with flour.
  2. Mix the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Incorporate the eggs one at a time, followed by lemon juice, lemon zest, and vanilla extract.
  5. Combine the dry ingredients with the butter mixture, alternating with buttermilk.
  6. Bake for 25-30 minutes and cool completely.
  7. Make the frosting by beating softened butter and gradually adding powdered sugar, lemon juice, and vanilla extract until smooth.
  8. Crumble the cooled cake into fine crumbs and mix with the frosting until well combined.
  9. Shape the mixture into 1-inch balls and refrigerate for at least 30 minutes.
  10. Melt the candy melts or chocolate chips until smooth, adding yellow food coloring if desired.
  11. Assemble the pops by dipping lollipop sticks into the melted candy and inserting them into the cake balls.
  12. Coat each cake pop in the melted candy and let them set upright.

Notes

For dietary restrictions, you can substitute unsweetened applesauce for butter or regular milk for buttermilk.
