Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan with flour.
- Mix the flour, baking powder, baking soda, and salt in a medium bowl.
- Cream the softened butter and granulated sugar until light and fluffy.
- Incorporate the eggs one at a time, followed by lemon juice, lemon zest, and vanilla extract.
- Combine the dry ingredients with the butter mixture, alternating with buttermilk.
- Bake for 25-30 minutes and cool completely.
- Make the frosting by beating softened butter and gradually adding powdered sugar, lemon juice, and vanilla extract until smooth.
- Crumble the cooled cake into fine crumbs and mix with the frosting until well combined.
- Shape the mixture into 1-inch balls and refrigerate for at least 30 minutes.
- Melt the candy melts or chocolate chips until smooth, adding yellow food coloring if desired.
- Assemble the pops by dipping lollipop sticks into the melted candy and inserting them into the cake balls.
- Coat each cake pop in the melted candy and let them set upright.
