Instructions
- In a mixing bowl, whisk together flour, eggs, milk, water, melted butter, and a pinch of salt until the batter is smooth. Allow it to rest for about 30 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour a small amount of batter into the skillet, swirling it around to evenly coat the bottom. Cook for 1-2 minutes until the edges begin to lift, then carefully flip and cook for another minute. Repeat with the remaining batter.
- In another pan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant—about 30 seconds to a minute.
- Toss in the asparagus and mushrooms, season with salt and pepper, and let them cook until tender—about 5 minutes.
- Fill each crepe with the garlic, asparagus, and mushroom mixture. If desired, sprinkle with Parmesan cheese, roll them up, and serve warm.
