Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, water, melted butter, and a pinch of salt until the batter is smooth. Allow it to rest for about 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour a small amount of batter into the skillet, swirling it around to evenly coat the bottom. Cook for 1-2 minutes until the edges begin to lift, then carefully flip and cook for another minute. Repeat with the remaining batter.
  3. In another pan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant—about 30 seconds to a minute.
  4. Toss in the asparagus and mushrooms, season with salt and pepper, and let them cook until tender—about 5 minutes.
  5. Fill each crepe with the garlic, asparagus, and mushroom mixture. If desired, sprinkle with Parmesan cheese, roll them up, and serve warm.
