Description

A delightful fusion of peach cobbler and French toast, perfect for brunch or special occasions.

Ingredients

Scale
  • 1 lb brioche, cut into 1-inch cubes
  • 5 eggs
  • 2 cups half and half
  • 2 1/2 cups peaches, peeled and sliced into 1/2-inch thick wedges
  • 1 1/2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 2 tbsp butter, chilled and cut into small pieces
  • 1/2 tsp cinnamon for sprinkling
  • Powdered sugar for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs, half-and-half, vanilla, lemon juice, salt, cinnamon, and nutmeg until well blended.
  3. Layer the brioche cubes evenly in a greased 9×13-inch baking dish.
  4. Distribute the sliced peaches over the bread cubes.
  5. Pour the custard mixture over the brioche and peaches, pressing down gently to ensure the bread absorbs the custard.
  6. Mix the flour and brown sugar in a small bowl. Sprinkle this mixture evenly over the top of your dish with the chilled butter pieces and additional cinnamon.
  7. Cover and refrigerate for at least 2 hours or overnight.
  8. Bake in the preheated oven for 45-50 minutes or until golden and set.
  9. Let cool slightly, dust with powdered sugar, and serve warm!

Notes

For a twist, substitute peaches with seasonal fruits like blueberries or apples. Pair with whipped cream or ice cream for an indulgent treat.
