Description

A comforting Irish delicacy with a creamy potato filling and flaky crust, perfect for chilly evenings.


Ingredients

  • 2 pounds of potatoes, peeled and cubed
  • 1 cup of milk
  • 4 tablespoons of butter
  • 1 cup of grated cheese (cheddar works wonderfully)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 1 pre-made pie crust

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the cubed potatoes in salted water until they’re tender. Once cooked, drain them and mash well.
  3. In a saucepan, combine the milk, butter, garlic, and onion. Heat this mixture until the onion softens.
  4. Mix the milk and onion mixture into the mashed potatoes along with the grated cheese, salt, and pepper to taste.
  5. Roll out the pie crust and fit it into a pie dish.
  6. Fill the crust with the creamy potato mixture. Cover it with another layer of pie crust for a double-crust experience if desired.
  7. Bake in the preheated oven for about 25-30 minutes, or until the top turns golden brown.
  8. Allow the pie to cool slightly before slicing and serving.

Notes

Pairs well with a crisp salad or Irish soda bread. Leftovers can be stored for 3-4 days in the refrigerator.
