Ingredients

- 2 pounds of potatoes, peeled and cubed
- 1 cup of milk
- 4 tablespoons of butter
- 1 cup of grated cheese (cheddar works wonderfully)
- 1 onion, chopped
- 2 cloves of garlic, minced
- Salt and pepper to taste
- 1 pre-made pie crust
Instructions
- Preheat your oven to 400°F (200°C).
- Boil the cubed potatoes in salted water until they’re tender. Once cooked, drain them and mash well.
- In a saucepan, combine the milk, butter, garlic, and onion. Heat this mixture until the onion softens.
- Mix the milk and onion mixture into the mashed potatoes along with the grated cheese, salt, and pepper to taste.
- Roll out the pie crust and fit it into a pie dish.
- Fill the crust with the creamy potato mixture. Cover it with another layer of pie crust for a double-crust experience if desired.
- Bake in the preheated oven for about 25-30 minutes, or until the top turns golden brown.
- Allow the pie to cool slightly before slicing and serving.
Notes
Pairs well with a crisp salad or Irish soda bread. Leftovers can be stored for 3-4 days in the refrigerator.
