Description

A quick yet luxurious pasta dish combining rich chorizo and succulent prawns in a creamy sauce.

Ingredients

Scale
  • 200g pasta (fettuccine or spaghetti)
  • 200g prawns (peeled and deveined)
  • 100g chorizo sausage (sliced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 200ml heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)
  • Parmesan cheese (grated, optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chopped onion and minced garlic, sauté until the onion becomes translucent.
  4. Add the sliced chorizo to the skillet and cook until it’s nice and crispy.
  5. Toss in the prawns, cooking until they turn pink and opaque.
  6. Pour in the heavy cream, stirring until combined. Let it simmer for a few minutes until the sauce thickens a bit.
  7. Season with salt and pepper to taste.
  8. Add the cooked pasta to the skillet and toss to coat it well in the creamy goodness.
  9. Garnish with chopped parsley and optional grated Parmesan cheese. Serve hot.

Notes

Feel free to swap out pasta types or substitute prawns with chicken or other seafood.
