Ingredients

  • 8 oz rice noodles
  • 1 lb chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (bell peppers, carrots, and bean sprouts)
  • 2 eggs, beaten
  • 1/4 cup fish sauce
  • 3 tablespoons sugar
  • 2 tablespoons lime juice
  • 1/4 cup green onions, chopped
  • Crushed peanuts for garnish
  • Lime wedges for serving

Instructions

  1. Soak the rice noodles in hot water for about 20 minutes or until tender, then drain.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the minced garlic and cook for about 30 seconds.
  4. Cook the thinly sliced chicken until cooked through and no longer pink.
  5. Scramble the beaten eggs in the pan until fully cooked and mix with the chicken.
  6. Add the mixed vegetables and stir-fry for 2-3 minutes.
  7. Combine everything by adding the soaked noodles, fish sauce, sugar, and lime juice, tossing well.
  8. Finish by removing from heat and sprinkling with green onions and crushed peanuts.
  9. Serve with lime wedges on the side.

Notes

Customize with your favorite proteins or vegetables; tofu can be used for a vegetarian option. Adjust the sauce to taste.
