- 8 oz rice noodles
- 1 lb chicken breast, thinly sliced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup mixed vegetables (bell peppers, carrots, and bean sprouts)
- 2 eggs, beaten
- 1/4 cup fish sauce
- 3 tablespoons sugar
- 2 tablespoons lime juice
- 1/4 cup green onions, chopped
- Crushed peanuts for garnish
- Lime wedges for serving
Instructions
- Soak the rice noodles in hot water for about 20 minutes or until tender, then drain.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and cook for about 30 seconds.
- Cook the thinly sliced chicken until cooked through and no longer pink.
- Scramble the beaten eggs in the pan until fully cooked and mix with the chicken.
- Add the mixed vegetables and stir-fry for 2-3 minutes.
- Combine everything by adding the soaked noodles, fish sauce, sugar, and lime juice, tossing well.
- Finish by removing from heat and sprinkling with green onions and crushed peanuts.
- Serve with lime wedges on the side.
Notes
Customize with your favorite proteins or vegetables; tofu can be used for a vegetarian option. Adjust the sauce to taste.
