Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup milk
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pitted cherries (fresh or frozen)
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl until well combined.
- Mix the milk, vegetable oil, eggs, and vanilla extract in a separate bowl until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined—don’t overmix, or your muffins may turn out tough.
- Fold in the cherries and chocolate chips until evenly distributed throughout the batter.
- Fill each muffin cup about two-thirds full with the batter, ensuring even distribution.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a nutty flavor, consider using almond milk. To make it gluten-free, substitute with a gluten-free flour blend.
