Description

A comforting and budget-friendly casserole packed with savory ground beef, creamy rice, and gooey cheese, perfect for family dinners.


Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Brown the ground beef along with the diced onion in a large skillet over medium heat until fully browned. Drain any excess fat.
  3. Add the minced garlic to the mixture and sauté for about 30 seconds until fragrant.
  4. Combine the cream of mushroom soup, milk or broth, paprika, salt, and pepper in a bowl and whisk until smooth.
  5. Mix together the cooked rice, the beef and onion mixture, half of the shredded cheese, and the sauce in your prepared baking dish. Stir well.
  6. Top with the remaining cheese and cover with aluminum foil. Bake for 20 minutes.
  7. Remove the foil after 20 minutes and continue baking for an additional 10 minutes until bubbly and golden.
  8. Broil for 2 minutes for a crispy topping, if desired.
  9. Garnish with chopped parsley and serve hot.

Notes

For extra creaminess, add a splash of milk or broth before baking. Leftovers can be stored in an airtight container for up to 3 days.
