Ingredients

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter with both types of sugar until smooth and fluffy.
  3. Beat in the egg and pumpkin puree, mixing until well combined.
  4. Whisk together the flour, baking soda, baking powder, salt, and all the chai spices in a different bowl.
  5. Gradually add the dry mixture into the wet ingredients, stirring until just combined.
  6. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until the edges turn golden brown.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
