Ingredients

  • 1 cup pumpkin puree
  • 1 ½ cups all-purpose flour
  • ¾ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • 2 large eggs
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp maple syrup (for glaze)
  • 12 tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. Mix together the pumpkin puree, brown sugar, eggs, and vanilla in a large bowl until well combined.
  3. Whisk together the flour, baking powder, baking soda, and spices in another bowl.
  4. Combine the wet and dry ingredients, stirring until just mixed. Don’t over-mix!
  5. Spoon the batter into the donut pan, filling each cavity about ¾ full.
  6. Bake for 15-18 minutes, or until a toothpick inserted comes out clean.
  7. Let them cool for a few minutes before transferring to a wire rack.
  8. Mix powdered sugar, maple syrup, and a splash of milk for the glaze; drizzle over cooled donuts when ready to serve.

Notes

Serve fresh for the best taste. Can be stored for up to 2 days in an airtight container or frozen for later.
