Description

Light and zesty Lemon Donuts that are perfect for brunch or a sweet treat any time of the day.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup plain yogurt or sour cream
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan or mini muffin pan with non-stick spray.
  2. Whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. Mix the yogurt or sour cream, vegetable oil, eggs, lemon zest, lemon juice, and vanilla extract in a separate bowl until smooth and uniform.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill your donut or mini muffin pan with the batter, ensuring each cavity is about two-thirds full.
  6. Bake for 10-12 minutes, until the tops are lightly golden and a toothpick inserted comes out clean.
  7. Allow the donuts or muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
  8. Whisk powdered sugar with lemon juice until smooth, then drizzle over the cooled donuts.

Notes

For the best citrus flavor, use fresh lemon juice and zest. Store in an airtight container for up to three days.
