- 2 medium zucchinis, sliced
- 2 medium yellow squashes, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme (optional)
Instructions
- Preheat your oven to 350°F (175°C) and coat a casserole dish with cooking spray.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add diced onions and minced garlic, and sauté until soft and fragrant, about 3-4 minutes.
- Combine the sliced zucchinis, yellow squashes, sautéed onion and garlic, shredded cheddar, optional thyme, salt, and pepper in a large bowl. Mix well.
- Transfer the mixture into the prepared casserole dish, spreading it out evenly.
- Sprinkle the breadcrumbs and grated Parmesan cheese on top.
- Bake for approximately 25-30 minutes, or until the top is golden brown and the vegetables are tender.
- Let it cool for a few minutes before serving. Enjoy the aroma wafting through your kitchen!
