Description

A comforting and nutritious casserole featuring zucchini, yellow squash, and a melty cheese topping, perfect for family dinners or holiday gatherings.


Ingredients

  • 2 medium zucchinis, sliced
  • 2 medium yellow squashes, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and coat a casserole dish with cooking spray.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add diced onions and minced garlic, and sauté until soft and fragrant, about 3-4 minutes.
  3. Combine the sliced zucchinis, yellow squashes, sautéed onion and garlic, shredded cheddar, optional thyme, salt, and pepper in a large bowl. Mix well.
  4. Transfer the mixture into the prepared casserole dish, spreading it out evenly.
  5. Sprinkle the breadcrumbs and grated Parmesan cheese on top.
  6. Bake for approximately 25-30 minutes, or until the top is golden brown and the vegetables are tender.
  7. Let it cool for a few minutes before serving. Enjoy the aroma wafting through your kitchen!
