Ingredients

  • 4 cups shredded zucchini
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 2 cups pizza sauce
  • 1 green bell pepper, chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the zucchini by shredding and placing it in a colander. Sprinkle with salt and let drain for 30 minutes.
  2. Cook the ground beef in a skillet over medium heat, adding chopped onion until both are cooked and fragrant.
  3. Mix the drained zucchini with eggs, Parmesan, salt, garlic powder, and black pepper until well combined.
  4. Layer half of the zucchini mixture in a greased baking dish, top with the beef and onion mixture, followed by pizza sauce, bell peppers, mushrooms, and oregano.
  5. Finish with the remaining zucchini mixture, and sprinkle mozzarella and cheddar on top.
  6. Bake at 375°F (190°C) for 35-40 minutes until cheese is golden and bubbly.
  7. Serve after cooling for a few minutes.
