- 4 cups shredded zucchini
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1 pound ground beef
- 1/2 cup chopped onion
- 2 cups pizza sauce
- 1 green bell pepper, chopped
- 1/2 cup sliced mushrooms
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Instructions
- Prepare the zucchini by shredding and placing it in a colander. Sprinkle with salt and let drain for 30 minutes.
- Cook the ground beef in a skillet over medium heat, adding chopped onion until both are cooked and fragrant.
- Mix the drained zucchini with eggs, Parmesan, salt, garlic powder, and black pepper until well combined.
- Layer half of the zucchini mixture in a greased baking dish, top with the beef and onion mixture, followed by pizza sauce, bell peppers, mushrooms, and oregano.
- Finish with the remaining zucchini mixture, and sprinkle mozzarella and cheddar on top.
- Bake at 375°F (190°C) for 35-40 minutes until cheese is golden and bubbly.
- Serve after cooling for a few minutes.
Notes
This casserole can be modified with different vegetables or protein options. Consider adding a fresh basil garnish for added flavor.
