Description

A vibrant and refreshing pasta salad combining zesty lemon and fresh basil, perfect for potlucks and casual dinners.


Ingredients

  • 8 ounces pasta (fusilli or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Once it’s al dente, drain and rinse it under cold water.
  2. Combine in a large mixing bowl, the cooled pasta, halved cherry tomatoes, chopped basil, and grated Parmesan.
  3. Make the dressing by whisking together olive oil, lemon juice, minced garlic, salt, and pepper until well combined.
  4. Mix it up by pouring the dressing over the pasta mixture and tossing gently.
  5. Chill in the refrigerator for at least 30 minutes before serving.
