Ingredients

- 8 ounces pasta (fusilli or farfalle)
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Once it’s al dente, drain and rinse it under cold water.
- Combine in a large mixing bowl, the cooled pasta, halved cherry tomatoes, chopped basil, and grated Parmesan.
- Make the dressing by whisking together olive oil, lemon juice, minced garlic, salt, and pepper until well combined.
- Mix it up by pouring the dressing over the pasta mixture and tossing gently.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Feel free to substitute pasta with whole wheat or gluten-free options, or use dairy-free cheese for a vegan version.
