- 1 cup buttermilk

- 1 cup shredded coconut
- 1 cup chopped pecans
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- Cream together the butter and sugar until the mixture is light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Whisk together the flour, baking powder, baking soda, and salt in a separate bowl. Gradually add this to the creamed mixture, alternating with the buttermilk, and mix until just incorporated.
- Beat the cream cheese and powdered sugar until smooth and creamy for the cheesecake swirl.
- Pour half of the cake batter into the prepared pans. Spoon the cheesecake mixture over this layer, then top with the remaining cake batter.
- Sprinkle the top with shredded coconut and chopped pecans.
- Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Notes
Dust the top with powdered sugar or serve with vanilla ice cream for an elegant finish.
