Ingredients

  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Juice of 1 fresh lime
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until soft, about 5 minutes.
  3. Toss in minced garlic and cook for an additional minute until fragrant.
  4. Stir in the ground turkey, browning it thoroughly.
  5. Pour in the diced tomatoes, chicken broth, white beans, cumin, chili powder, salt, and pepper.
  6. Bring everything to a boil. Reduce the heat and allow it to simmer for 20-30 minutes, letting the flavors meld together beautifully.
  7. Before serving, stir in the fresh lime juice for that zesty kick.
  8. Garnish with fresh cilantro if desired.

Notes

For a thicker chili, let it simmer uncovered for the last 10-15 minutes. Substitute ground turkey with plant-based meat for a vegetarian option.
