- 1 cup all-purpose flour
- 1/4 cup coconut oil (solid, not melted)
- 1/4 cup powdered sugar
- 1/4 tsp salt
- 1/4 cup cold water
- 1 cup pumpkin puree (fresh or canned)
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp clove
- 1/2 cup maple syrup
Instructions
- Preheat your oven to 350ยฐF (175ยฐC).
- Combine the flour, coconut oil, powdered sugar, and salt in a large mixing bowl. Mix until crumbly.
- Gradually add the cold water, stirring until a dough forms.
- Roll out the dough on a lightly floured surface into a rectangle. Cut it into smaller rectangles for your pop tarts.
- Mix the pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and clove in another bowl to create the filling.
- Place a spoonful of the filling on half of the dough rectangles. Cover with the remaining rectangles and seal the edges using a fork.
- Bake for 20-25 minutes, or until the pop tarts are golden brown.
- Mix the maple syrup with powdered sugar until smooth for an easy icing. Drizzle over the cooled pop tarts before serving.
Notes
These pop tarts can be stored in an airtight container for up to three days or frozen for longer storage. Reheat in the oven or toaster for a freshly-baked taste.
