Description

A hearty and satisfying twist on a classic Italian dish, this Vegan Lentil Bolognese is perfect for busy weeknights and meal prep, bringing together earthy lentils and vibrant vegetables in a rich tomato sauce.


Ingredients

  • 1 cup lentils (brown or green)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil for sautรฉing
  • Pasta of choice (for serving)

Instructions

  1. Heat a splash of olive oil in a pot over medium heat.
  2. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sautรฉ until softened, about 5-7 minutes.
  3. Stir in the lentils, crushed tomatoes, tomato paste, dried oregano, and dried basil.
  4. Add water as needed to achieve your preferred sauce consistency.
  5. Season with salt and pepper to taste.
  6. Allow it to simmer for about 30 minutes, until the lentils are tender and flavors meld beautifully.
  7. Serve the Bolognese over your cooked pasta of choice.

Notes

Rinse lentils before use and feel free to swap herbs and spices to suit your taste. Consider blending a portion of the sauce for a creamier texture.
