- 1 1/2 cups all-purpose flour
- 1/2 cup vegan butter or margarine
- 1/4 cup powdered sugar
- 1/4 cup cold water
- 1 cup raspberry jam (homemade or store-bought)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the all-purpose flour and powdered sugar in a mixing bowl.
- Cut in the vegan butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until the dough comes together.
- Roll out the dough on a floured surface until it’s about 1/8 inch thick.
- Cut circles from the dough to fit into a greased muffin tin.
- Spoon a generous amount of raspberry jam into each pastry shell.
- Bake for 20-25 minutes or until the pastry is golden around the edges.
- Allow the tarts to cool before serving them up.
Notes
For variations, use different fruit jams or add spices for a twist. Store in an airtight container at room temperature for up to three days.
