Description

Delightful Vegan Coffee Cake Cookies that combine the rich flavors of coffee cake with the soft texture of cookies, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup coconut oil, melted
  • 1/2 cup plant-based milk
  • 1 tbsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats (optional)
  • 1/2 cup powdered sugar (for icing)
  • 1 tbsp plant-based milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the melted coconut oil and plant-based milk until well blended.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; don’t overmix!
  5. Fold in the ground cinnamon and rolled oats if you’re using them, adding texture and flavor.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them a couple of inches apart.
  7. In a small bowl, mix together the brown sugar and cinnamon for the streusel topping, then sprinkle it generously over each cookie.
  8. Bake for 12-15 minutes or until the cookies are golden brown on the bottom.
  9. For the icing, whisk together the powdered sugar and a tablespoon of plant-based milk until smooth.
  10. Drizzle the icing over the cookies once they have cooled—then, enjoy with a steaming cup of coffee!

Notes

For best results, make sure the coconut oil isn’t too hot when mixing with plant-based milk. A quick chill in the fridge can help the cookies maintain their shape.
