Description

A creamy and comforting vegan soup made with broccoli, potatoes, and coconut milk, perfect for a cozy meal.


Ingredients

Scale
  • 2 cups broccoli florets
  • 2 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 tablespoon nutritional yeast
  • Salt and pepper to taste
  • 1 tablespoon olive oil for sautéing

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until softened and fragrant.
  3. Incorporate the diced potatoes and pour in the vegetable broth. Bring it to a boil.
  4. Once boiling, add in the broccoli and reduce the heat to simmer for 10-15 minutes, or until all the vegetables are tender.
  5. Remove from heat and blend using an immersion blender until smooth and creamy.
  6. Stir in the coconut milk, nutritional yeast, and season with salt and pepper as desired.
  7. Serve warm, garnished with a sprinkling of nutritional yeast if you like!

Feel free to substitute other vegetables if needed, and adjust seasonings to taste.
