A delightful Vanilla Custard & Strawberry Tart that combines sweet strawberries and velvety custard, perfect for summer occasions.

- 1 1/4 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- 1 tablespoon apricot jam
- 1 tablespoon water
Instructions
- Prepare the Tart Crust by mixing the flour, powdered sugar, and salt. Add the cold, cubed butter and mix until coarse crumbs form. Stir in the egg yolk and vanilla extract. Form into a ball, wrap, and chill for 30 minutes.
- Preheat the oven to 350°F (175°C). Roll out the dough to fit a 9-inch tart pan. Trim edges, prick the bottom, and bake with weights for 15 minutes. Remove weights and bake for another 10 minutes until golden. Let cool.
- Warm the milk in a saucepan. In a bowl, whisk together sugar, cornstarch, and egg yolks. Gradually pour hot milk into egg mixture while whisking. Return to saucepan and cook until thickened. Stir in butter and vanilla, then chill.
- Spread the custard into the cooled tart shell. Arrange the sliced strawberries on top. Melt apricot jam with water and brush over strawberries for glaze.
Notes
Serve chilled for a refreshing treat. Customize with different berries as desired.
