- 4 medium sweet potatoes
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1 cup Greek yogurt
- 1/2 cup chopped walnuts
- 1/2 teaspoon cinnamon
- Salt to taste

Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for about 45-60 minutes or until they’re tender.
- Once baked, let the sweet potatoes cool slightly. Cut them in half and scoop out the insides into a bowl, leaving a small border.
- In the bowl with the sweet potato flesh, add brown sugar, maple syrup, Greek yogurt, chopped walnuts, cinnamon, salt, and pepper. Mix everything until well combined.
- Spoon the mixture back into the sweet potato skins, packing them generously.
- Place the filled skins back onto the baking sheet and bake for an additional 15-20 minutes until heated through.
- Serve warm—these delicious sweet potatoes are perfect for Thanksgiving or any special occasion.
Notes
For added flavor, consider using honey instead of maple syrup or mixing in cooked bacon bits for a protein boost.
