Description

A refreshing and vibrant Turkish Potato Salad made with tender potatoes, aromatic herbs, and a zesty dressing.


Ingredients

  • 2 pounds waxy potatoes
  • 1/2 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1/4 cup diced cucumbers
  • 1/4 cup diced tomatoes

Instructions

  1. Place the potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.
  2. Drain the potatoes and let them cool slightly.
  3. Whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper in a large mixing bowl.
  4. Dice the cooled potatoes into bite-sized pieces and add them to the bowl with the dressing, along with the parsley, green onions, cucumbers, and tomatoes.
  5. Gently toss everything together until well mixed.
  6. Taste and adjust the seasoning if needed. Serve chilled or at room temperature.

Notes

Chill the salad before serving to allow the flavors to meld.
