A refreshing and vibrant Turkish Potato Salad made with tender potatoes, aromatic herbs, and a zesty dressing.
Ingredients

- 2 pounds waxy potatoes
- 1/2 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1/4 cup diced cucumbers
- 1/4 cup diced tomatoes
Instructions
- Place the potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- Whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper in a large mixing bowl.
- Dice the cooled potatoes into bite-sized pieces and add them to the bowl with the dressing, along with the parsley, green onions, cucumbers, and tomatoes.
- Gently toss everything together until well mixed.
- Taste and adjust the seasoning if needed. Serve chilled or at room temperature.
Notes
Chill the salad before serving to allow the flavors to meld.
