- 9 lasagna noodles
- 1 pound ground turkey
- 2 cups fresh spinach
- 1 jar marinara sauce
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- Italian seasoning to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions, then drain and set aside.
- Brown the ground turkey in a large skillet over medium heat. Once cooked, add the fresh spinach and sauté until wilted.
- Combine ricotta cheese, the egg, salt, pepper, and Italian seasoning in a separate bowl. Mix well.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer three lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the turkey-spinach mixture, and a third of the mozzarella cheese.
- Repeat the layering process with another set of noodles, the remaining ricotta, the turkey-spinach mixture, and another third of the mozzarella.
- Add the final layer of noodles, then spread the remaining marinara sauce over them. Sprinkle with the rest of the mozzarella and the Parmesan cheese.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for another 15 minutes until the cheese is bubbly and golden.
- Cool for a few minutes before slicing and serving.
Notes
Let lasagna cool slightly before slicing to help it hold its shape. Pair with a light side salad or garlic bread.
