- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup heavy cream
- 1 cup mango puree
- 1/4 cup powdered sugar
- Fresh mango slices for garnish
Instructions
- Preheat the oven to 325°F (160°C). Lightly grease a 9-inch springform pan.
- Mix graham cracker crumbs and melted butter in a bowl. Press this mixture firmly into the base of the prepared pan.
- Beat the softened cream cheese and granulated sugar together until smooth. Add in the vanilla extract, then the eggs—one at a time—mixing thoroughly after each addition.
- Pour the cream cheese filling over your crust and spread it evenly.
- Bake for 55-60 minutes or until the center is set but still has a slight jiggle. Let it cool down once baked.
- Whip the heavy cream with powdered sugar until soft peaks form. Fold in the mango puree.
- Spread the mango cream over the cooled cheesecake.
- Refrigerate for at least 4 hours or overnight.
- Garnish with fresh mango slices just before serving.
Notes
For a unique twist, consider using crushed digestive biscuits instead of graham crackers or swapping the mango puree for passion fruit.
