Ingredients

  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup mango puree
  • 1/4 cup powdered sugar
  • Fresh mango slices for garnish

Instructions

  1. Preheat the oven to 325°F (160°C). Lightly grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter in a bowl. Press this mixture firmly into the base of the prepared pan.
  3. Beat the softened cream cheese and granulated sugar together until smooth. Add in the vanilla extract, then the eggs—one at a time—mixing thoroughly after each addition.
  4. Pour the cream cheese filling over your crust and spread it evenly.
  5. Bake for 55-60 minutes or until the center is set but still has a slight jiggle. Let it cool down once baked.
  6. Whip the heavy cream with powdered sugar until soft peaks form. Fold in the mango puree.
  7. Spread the mango cream over the cooled cheesecake.
  8. Refrigerate for at least 4 hours or overnight.
  9. Garnish with fresh mango slices just before serving.

Notes

For a unique twist, consider using crushed digestive biscuits instead of graham crackers or swapping the mango puree for passion fruit.
