Description

A refreshing and delicious Key Lime Pie with creamy filling, buttery crust, and fluffy meringue topping.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/3 cup sugar
  • 1 cup sweetened condensed milk
  • 1/2 cup sour cream
  • 3/4 cup fresh key lime juice
  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup sugar (for the meringue)
  • Lime zest (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, melted butter, and 1/3 cup sugar. Press into a pie pan and bake for 10 minutes, then cool.
  3. Mix sweetened condensed milk, sour cream, and key lime juice until smooth, then pour over the cooled crust.
  4. Beat egg whites with cream of tartar until soft peaks form. Gradually add 1/2 cup sugar and beat to stiff peaks. Spread meringue over the lime filling.
  5. Bake the pie for another 10-12 minutes, until the meringue is lightly browned.
  6. Chill for at least 2 hours before serving, and garnish with lime zest.

Notes

For extra flavor, pair with whipped cream or vanilla ice cream. Store leftovers in the refrigerator or freeze pre-sliced for later use.
