- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/3 cup sugar
- 1 cup sweetened condensed milk
- 1/2 cup sour cream
- 3/4 cup fresh key lime juice
- 4 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup sugar (for the meringue)
- Lime zest (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the graham cracker crumbs, melted butter, and 1/3 cup sugar. Press into a pie pan and bake for 10 minutes, then cool.
- Mix sweetened condensed milk, sour cream, and key lime juice until smooth, then pour over the cooled crust.
- Beat egg whites with cream of tartar until soft peaks form. Gradually add 1/2 cup sugar and beat to stiff peaks. Spread meringue over the lime filling.
- Bake the pie for another 10-12 minutes, until the meringue is lightly browned.
- Chill for at least 2 hours before serving, and garnish with lime zest.
Notes
For extra flavor, pair with whipped cream or vanilla ice cream. Store leftovers in the refrigerator or freeze pre-sliced for later use.
