Description
A delightful, comforting dish combining rich tomato flavor with fluffy cheddar dumplings, perfect for chilly days.
Ingredients
Scale
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups vegetable or chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley
- 2/3 cup milk
- 1/2 teaspoon garlic powder
Instructions
- Heat the olive oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until they are soft and fragrant.
- Pour in the crushed tomatoes and broth, then add dried basil, dried oregano, salt, and pepper. Stir and let it simmer for about 20 minutes to meld the flavors.
- Combine flour, baking powder, and salt in a bowl for the dumplings.
- Mix in the shredded cheddar cheese, chopped parsley, milk, and garlic powder until everything is just combined.
- Drop spoonfuls of the dumpling dough into the gently simmering soup.
- Cover the pot and let them cook undisturbed for 15 minutes. This helps the dumplings become fluffy!
- Serve hot for a nourishing, warming dish that’s perfect for any occasion.
Notes
For extra flavor, try roasting the garlic before adding it to the soup. Make sure not to lift the lid while the dumplings are cooking to help them steam properly.
