A comforting dish that celebrates fresh tomatoes, topped with pimento cheese biscuits.

- 6 cups fresh tomatoes, chopped
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 1/4 cup sugar
- 2 tablespoons olive oil
- 4 cups biscuit mix
- 1 cup pimento cheese
- 1 1/2 cups milk
- Salt and pepper to taste
- Fresh herbs (basil or thyme) for garnish
Instructions
- Preheat your oven to 375ยฐF (190ยฐC).
- Heat the olive oil over medium heat in a large skillet. Add the chopped onions and minced garlic; sautรฉ until the onions become translucent.
- Stir in the chopped tomatoes and sugar, seasoning with salt and pepper. Cook for about 10 minutes.
- Pour the tomato mixture into a greased baking dish.
- Combine the biscuit mix and milk in a large bowl until just blended. Gently fold in the pimento cheese.
- Drop spoonfuls of the biscuit mixture over the tomato filling.
- Bake for 25-30 minutes or until the biscuits are golden brown and puffy.
- Garnish with fresh herbs before serving.
Notes
Choose ripe tomatoes for the best flavor. This dish can be frozen, but is best enjoyed fresh.
