- 4 cloves of garlic
- Fresh herbs (like basil and thyme)
- 1 cup heavy cream
- 1 onion
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Start by heating the olive oil in a large pot over medium heat.
- Add the finely chopped onions and minced garlic, then sauté until the onions are translucent, about 5 minutes.
- Next, toss in the chopped fresh tomatoes. Cook them down, stirring occasionally, until they start breaking down and becoming saucy, around 10 minutes.
- Pour in the vegetable broth and sprinkle in your fresh herbs. Let the mixture simmer for 15-20 minutes, allowing the flavors to meld together beautifully.
- Blend the soup until smooth using a blender or immersion blender, then return it to the pot.
- Stir in the heavy cream, and season with salt and pepper to taste. Heat through before serving.
Notes
For an even deeper flavor, try roasting the tomatoes before adding them to the soup. Consider serving with a drizzle of olive oil and fresh basil.
