Description

Fresh, crisp, and packed with flavor, these tofu lettuce wraps are a healthy and satisfying meal option.


Ingredients

Scale
  • 14 ounces extra-firm tofu (pressed, cut into ยพ-inch cubes)
  • 1 tablespoon plus 1 teaspoon cornstarch (divided)
  • ยผ cup tamari (or soy sauce)
  • 2 tablespoons hoisin sauce (vegan)
  • 1 teaspoon sriracha
  • 1 teaspoon maple syrup
  • 1 tablespoon neutral flavored cooking oil (or vegetable broth)
  • 6 green onions (chopped)
  • ยพ-inch ginger (fresh)
  • 1 small garlic clove (minced)
  • 1 cup cashews (optional, to taste)
  • 1 head iceberg or romaine lettuce (leaves separated)
  • Sesame seeds (optional, for garnishing)

Instructions

  1. Prepare Tofu: In a large bowl, toss the cubed tofu with 1 tablespoon of cornstarch until well-coated.
  2. Make Sauce: In a separate bowl, mix together tamari, hoisin sauce, sriracha, maple syrup, 1 teaspoon of cornstarch, and 2 tablespoons of water. Stir until well combined.
  3. Cook Tofu: Heat the cooking oil in a large nonstick skillet on medium-high heat. Add the tofu cubes and cook for approximately 5 minutes until golden brown, stirring occasionally.
  4. Cook Aromatics: Add the chopped green onions and sautรฉ for about 1 minute. Grate in the garlic and ginger and cook for an additional 30 seconds until fragrant.
  5. Combine Ingredients: Stir in the cashews, cooking for 1 minute while stirring constantly. Pour in the prepared sauce and an additional 2 tablespoons of water. Cook for around 3 minutes until the sauce thickens and coats the tofu nicely.
  6. Serve: Scoop the mixture into the lettuce leaves and enjoy!
