A delightful fusion dish combining coconut milk and fluffy jasmine rice topped with crispy tofu and fresh tropical ingredients.
Ingredients

- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- 1/2 teaspoon salt
- 1 block firm tofu, drained and pressed
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 cup fresh pineapple, diced
- 1 avocado, sliced
- Sweet chili sauce, for drizzling
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- Combine the rinsed rice, coconut milk, water, and salt in a pot. Bring to a boil, then cover and simmer for 15-20 minutes.
- Cut the tofu into bite-sized cubes and marinate in soy sauce for 10 minutes.
- Toss the marinated tofu in cornstarch until evenly coated.
- Heat vegetable oil in a skillet over medium-high heat and fry the tofu until golden brown, about 5-7 minutes.
- Fluff the rice and serve in bowls topped with crispy tofu, diced pineapple, sliced avocado, and sweet chili sauce.
Notes
For extra flavor, feel free to add sautéed greens or shredded carrots as toppings.
