- 1 cup Powdered Sugar
- 1/2 cup Unsalted Butter
- 1/2 teaspoon Salt
- 2 large Eggs
- 2 tablespoons Espresso Powder
- 1 cup Mascarpone Cheese
- 1/2 cup Heavy Cream
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, espresso powder, and salt in a bowl. Set aside.
- Beat the unsalted butter and granulated sugar in a separate bowl until light and fluffy.
- Add the eggs and mix until fully incorporated.
- Gradually mix in the dry ingredients until combined, then fold in the mascarpone cheese until smooth.
- Cover the dough and refrigerate for about 60 minutes to firm it up.
- Scoop the dough into balls, then roll them in powdered sugar.
- Bake on the prepared baking sheet for 10-12 minutes, or until the edges are set but the centers remain soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container for up to a week. For longer storage, freeze with parchment paper in between.
