Description

A showstopping dessert that transforms classic Italian Tiramisu into a light and fluffy cake roll, perfect for gatherings and celebrations.


Ingredients

Scale
  • 4 large eggs
  • 1/2 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup strong brewed coffee
  • 2 tablespoons coffee liqueur (optional)
  • Cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Prepare a jelly roll pan by lining it with parchment paper.
  2. Whisk together the eggs and sugar until pale and fluffy, about 5 minutes.
  3. Fold in the flour and cocoa powder, mixing until just combined.
  4. Pour the batter into the prepared pan, spreading it evenly.
  5. Bake for 12-15 minutes, until a toothpick comes out clean.
  6. Allow the cake to cool for about 5 minutes before turning it out onto a towel dusted with cocoa powder.
  7. Roll the cake up gently using the towel while itโ€™s still warm, and let it cool completely.
  8. Whip the mascarpone cheese and heavy cream in a separate bowl until soft peaks form.
  9. Mix the brewed coffee and coffee liqueur in a small bowl.
  10. Unroll the cake and soak it with the coffee mixture.
  11. Spread the mascarpone filling evenly over the cake.
  12. Roll the cake back up tightly, seam side down.
  13. Refrigerate for at least 2 hours to set the filling.
  14. Dust with cocoa powder and slice into pieces before serving.

Notes

Wrap leftovers tightly in plastic wrap or store in an airtight container. Best enjoyed within 3-4 days.
