Description

Ingredients

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or non-stick spray.
  2. In a mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until well combined.
  3. In another bowl, whisk together the sugar, eggs, vegetable oil, and vanilla extract until the mixture is smooth and creamy.
  4. Gradually incorporate the dry ingredients into the wet mixture, stirring gently to combine.
  5. Carefully fold the fresh raspberries into the batter, taking care not to mash them.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes. Check for doneness with a toothpick—if it comes out clean, your bread is ready.
  8. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a healthier alternative, swap vegetable oil with melted coconut oil or applesauce. Frozen raspberries can be used; just adjust baking time.
