Description

Deliciously rich coconut bread that pairs beautifully with coffee or as a snack.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1/2 tsp coconut extract
  • 1/2 tsp vanilla extract
  • 1/2 cup canned coconut milk
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup sweetened shredded coconut
  • 1 cup powdered sugar
  • 1/2 cup canned coconut milk (for glaze)
  • 1/4 tsp coconut extract (for glaze)
  • 3/4 tsp vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a loaf pan with parchment paper or grease it with nonstick cooking spray.
  2. Whisk together the flour, salt, and baking powder in a medium-sized mixing bowl until well combined. Set aside.
  3. Beat the softened butter and granulated sugar in a large mixing bowl using a hand mixer until creamy and fully blended.
  4. Add the eggs, coconut extract, vanilla extract, and coconut milk to the butter mixture, beating until the batter is smooth.
  5. Gradually mix in the dry ingredients until just combined—careful not to overmix!
  6. Fold in the sweetened shredded coconut until evenly distributed.
  7. Pour the coconut batter into the prepared loaf pan and bake for 60-70 minutes until a toothpick comes out clean.
  8. Whisk together the powdered sugar, coconut milk, coconut extract, and vanilla extract for the glaze until smooth.
  9. Pour the glaze over the cooled bread and sprinkle with additional shredded coconut, if desired. Enjoy!

Notes

For a tropical flair, mix in some lime zest or chocolate chips for a decadent twist.
