Delightful cookies that capture the essence of traditional Texas Sheet Cake, chewy and topped with rich chocolate icing.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup buttermilk
- 1 1/2 cups confectioners’ sugar (for icing)
- 1/4 cup butter (for icing)
- 1/4 cup cocoa powder (for icing)
- 1 tablespoon milk (for icing)
Instructions
- Preheat the oven to 350°F (175°C) and prepare your baking sheet.
- Whisk together the flour, cocoa powder, baking soda, and salt in one bowl.
- Cream together the butter and sugar in another bowl until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla and buttermilk.
- Gradually mix in the dry ingredients until just combined.
- Drop tablespoon-sized balls onto the baking sheet.
- Bake for 10-12 minutes until set but still soft.
- Prepare the icing while baking: melt butter, mix in cocoa and powdered sugar, then add a splash of milk and vanilla.
- Cool the cookies for a few minutes before drizzling the icing on top.
Notes
For a fun presentation, stack cookies on a plate and sprinkle with confectioners’ sugar. Serve warm with milk or ice cream.
