Ingredients

- 1 cup farro
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
Instructions
- Rinse the farro under cold water. Combine it with the water or vegetable broth in a pot.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 25-30 minutes until the farro is tender. Drain any excess liquid and allow it to cool.
- In a large bowl, mix the cooled farro with cherry tomatoes, cucumber, red onion, and basil.
- In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to combine all ingredients thoroughly.
- Serve chilled or at room temperature and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 2-3 days. You may need to add a little olive oil or balsamic vinegar before serving again.
