Description

A vibrant and nutritious salad featuring farro, cherry tomatoes, cucumbers, and a zesty dressing, perfect for any occasion.


Ingredients

Scale
  • 1 cup farro
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Rinse the farro under cold water. Combine it with the water or vegetable broth in a pot.
  2. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 25-30 minutes until the farro is tender. Drain any excess liquid and allow it to cool.
  3. In a large bowl, mix the cooled farro with cherry tomatoes, cucumber, red onion, and basil.
  4. In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until well combined.
  5. Pour the dressing over the salad and toss gently to combine all ingredients thoroughly.
  6. Serve chilled or at room temperature and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. You may need to add a little olive oil or balsamic vinegar before serving again.
