Instructions
- Preheat your oven to 160°C (320°F) and line an 8-inch round cake pan with parchment paper.
- Whisk the eggs and granulated sugar together until the mixture is fluffy and pale.
- Sift the cake flour and baking powder into a bowl and gently fold this into the egg mixture, careful not to deflate it.
- Combine the whole milk, vegetable oil, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients gradually. Mix until just combined; avoid over-mixing.
- Tap the batter into the prepared cake pan to release any air bubbles.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cake, then remove it from the pan. Serve with whipped cream and fresh berries.
