Ingredients

  • 100g (3/4 cup) cake flour
  • 1/2 teaspoon baking powder
  • 60ml (1/4 cup) whole milk
  • 60ml (1/4 cup) vegetable oil
  • 1/2 teaspoon vanilla extract
  • Whipped cream (for serving)
  • Fresh berries (for serving)

Instructions

  1. Preheat your oven to 160°C (320°F) and line an 8-inch round cake pan with parchment paper.
  2. Whisk the eggs and granulated sugar together until the mixture is fluffy and pale.
  3. Sift the cake flour and baking powder into a bowl and gently fold this into the egg mixture, careful not to deflate it.
  4. Combine the whole milk, vegetable oil, and vanilla extract in a separate bowl.
  5. Pour the wet ingredients into the dry ingredients gradually. Mix until just combined; avoid over-mixing.
  6. Tap the batter into the prepared cake pan to release any air bubbles.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
