Description

Recreate the beloved Taco Bell Mexican Pizza at home with this easy and customizable recipe.


Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 Tbsp homemade blend)
  • 2/3 cup water
  • 8 small (6-inch) flour tortillas (or corn tortillas, lightly fried)
  • 1 can (15 oz) refried beans
  • 1/4 cup water (to thin beans slightly)
  • 1 cup red enchilada sauce (or mild taco sauce)
  • 2 cups shredded Mexican blend cheese (or cheddar/Monterey Jack)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives (optional)
  • Oil for frying (or cooking spray if baking)

Instructions

  1. Cook the meat: In a skillet, cook the ground beef over medium heat until browned. Drain excess fat. Add the taco seasoning and water. Let it simmer for about 5 minutes until thickened.
  2. Prepare beans: In a small saucepan, warm the refried beans with 1/4 cup water, stirring until smooth and spreadable.
  3. Crisp tortillas: Fried method: Heat 2–3 Tbsp oil in a skillet. Fry the tortillas one at a time until golden and crisp, about 1–2 minutes per side. Drain on paper towels. Healthier method: Lightly brush or spray tortillas with oil. Bake at 400°F (200°C) for 5–7 minutes per side until crisp.
  4. Assemble pizzas: On a baking sheet, place one tortilla. Spread a layer of beans, followed by a layer of seasoned meat. Top it with another tortilla and spread a spoonful of enchilada or taco sauce. Sprinkle with cheese, and then add diced tomatoes, green onions, and olives if desired.
  5. Bake: Bake the assembled pizzas at 400°F (200°C) for 8–10 minutes, until the cheese is melted and bubbly.
  6. Serve: Slice each pizza into quarters, just like you would a traditional pizza. Serve hot with extra taco sauce or a dollop of sour cream for added delight.

Notes

Add lime juice for a zesty finish. Use pre-cooked rotisserie chicken for a quicker option.
