Description

A delicious and comforting sandwich featuring sautéed mushrooms, caramelized onions, and melty Swiss cheese between crispy, buttery bread.


Ingredients

  • 2 tbsp butter (plus extra for bread)
  • 1 tbsp olive oil
  • 1 shallot, finely chopped
  • 2 cups mushrooms (Portobello, Cremini, or Shiitake, sliced)
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices of bread (Rye, Sourdough, or Artisan)

Instructions

  1. Prepare the mushrooms: Start by heating a dry skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes until most of the moisture has evaporated.
  2. Add flavor: Incorporate the butter, olive oil, and finely chopped shallot into the pan. Continue cooking for an additional 5 minutes.
  3. Stir in thyme, balsamic vinegar (if using), and season with salt and pepper. Set aside.
  4. Assemble the sandwiches: Butter one side of each slice of bread, stack cheese, mushroom mixture, and another slice of cheese on the unbuttered side.
  5. Cook the melt: Place the sandwiches in a skillet or panini press. Cook for 2–3 minutes per side until the bread is golden and cheese has melted.

Notes

Experiment with different mushrooms and cheeses to suit your taste. Don’t skip buttering the bread for a perfect crunch!
